Zucchini Love

I love zucchini and was super happy and grateful when a friend dropped off a bag of it for me. This is one of my favourite ways to eat it but I needed to use the oven. We were all a little extra sweaty with the added heat in the already hot house but it was totally worth it. So yummy! 

Roasted Zucchini

-Wash and slice zucchini into ¼" thick slices
-Toss in bowl with extra virgin olive oil, salt & pepper
- Lay out on baking pan in a single layer
- Cook in oven at 350° for 12-15 min
(I check mine every 5 minutes to make sure I am not over cooking them. I find them too soggy if they get over cooked)
- Remove from oven and crumble feta on top, sprinkle with parsley
- Serve & enjoy

Try this on the BBQ! Get yourself some nonstick tinfoil. Slice zucchini thin, sprinkle with Cajun spice mix, top with Asiago cheese and grill til browned and cheese is all melty and delish.
